Prep Time: 20 minutes Cook Time: 15 minutes Yields: 4 tostadas

Ingredients for Tostadas:

  • 4 corn tortillas
  • 2 tbsp olive oil
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • 1/4 tsp garlic powder
  • Pinch of salt

Ingredients for Spicy Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional, for extra heat)
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Ingredients for Mango Salsa:

  • 1 ripe mango, diced
  • 1/2 red onion, finely diced
  • 1/2 bell pepper (any color), finely diced
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp lime juice
  • Salt and pepper to taste

Equipment:

  • Large skillet
  • Baking sheet
  • Small mixing bowl

Instructions:

  1. Prep the tortillas: Preheat oven to 350°F (175°C). Brush both sides of each tortilla with olive oil and sprinkle with chili powder, cumin, garlic powder, and salt.
  2. Bake the tortillas: Place tortillas on a baking sheet and bake for 8-10 minutes, or until golden brown and crispy.
  3. Prepare the shrimp: While the tortillas are baking, toss the shrimp with chili powder, smoked paprika, cayenne pepper (if using), lime juice, olive oil, salt, and pepper.
  4. Cook the shrimp: Heat a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through.
  5. Make the mango salsa: In a small mixing bowl, combine the diced mango, red onion, bell pepper, cilantro, lime juice, salt, and pepper.
  6. Assemble the tostadas: Top each tostada with a few shrimp, a generous spoonful of mango salsa, and any additional toppings you desire.

Things to Avoid:

  • Don’t overcook the shrimp: Shrimp cook quickly, so keep a close eye on them to avoid becoming rubbery.
  • Don’t overcrowd the pan: Cook the shrimp in batches if necessary to ensure even cooking.
  • Don’t overbake the tortillas: Keep a close eye on them in the oven, as they can burn quickly.

Alternatives:

  • Shrimp: You can substitute chicken, beef, or tofu for the shrimp.
  • Mango: If mangoes are not in season, you can use pineapple, peaches, or nectarines in the salsa.
  • Tortillas: If you don’t have corn tortillas, you can use flour tortillas or tostada shells.

Topping Recommendations:

  • Sliced avocado
  • Crumbled cotija cheese
  • Sour cream or Mexican crema
  • Pickled jalapeños or other hot peppers
  • Fresh lime wedges
