Mediterranean Tostadas with Whipped Feta and Roasted Grapes

Prep time: 30 minutes Cook time: 15-20 minutes Difficulty: Easy Serves: 4

Ingredients:

  • 4 corn tortillas
  • 2 tablespoons olive oil
  • 1/2 cup crumbled feta cheese
  • 1/4 cup plain Greek yogurt
  • 1/4 teaspoon dried oregano
  • 1 cup seedless red grapes
  • 1/4 cup chopped Kalamata olives
  • 1/4 cup chopped fresh parsley
  • 1/4 cup pomegranate arils
  • Balsamic glaze, for drizzling

Things to avoid:

  • Overcrowding the tostadas: Too many toppings can make them difficult to eat and soggy.
  • Burning the tortillas: Keep a close eye on them while toasting, as they can burn quickly.
  • Skipping the whipped feta: It adds a creamy, tangy element that balances the sweetness of the grapes.

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Brush both sides of the tortillas with olive oil.
  3. Place tortillas on a baking sheet and bake for 8-10 minutes, or until golden brown and crispy.
  4. In a small bowl, combine feta cheese, Greek yogurt, and oregano. Whip with a fork until light and fluffy.
  5. Toss grapes with remaining olive oil and place on a separate baking sheet. Roast for 15-20 minutes, or until softened and slightly caramelized.
  6. To assemble, spread a layer of whipped feta on each tostada.
  7. Top with roasted grapes, Kalamata olives, parsley, and pomegranate arils.
  8. Drizzle with balsamic glaze and serve immediately.
