Mediterranean Tostadas with Whipped Feta and Roasted Grapes

Ingredients:
- 4 corn tortillas
- 2 tablespoons olive oil
- 1/2 cup crumbled feta cheese
- 1/4 cup plain Greek yogurt
- 1/4 teaspoon dried oregano
- 1 cup seedless red grapes
- 1/4 cup chopped Kalamata olives
- 1/4 cup chopped fresh parsley
- 1/4 cup pomegranate arils
- Balsamic glaze, for drizzling
Things to avoid:
- Overcrowding the tostadas: Too many toppings can make them difficult to eat and soggy.
- Burning the tortillas: Keep a close eye on them while toasting, as they can burn quickly.
- Skipping the whipped feta: It adds a creamy, tangy element that balances the sweetness of the grapes.
Instructions:
- Preheat oven to 400°F (200°C).
- Brush both sides of the tortillas with olive oil.
- Place tortillas on a baking sheet and bake for 8-10 minutes, or until golden brown and crispy.
- In a small bowl, combine feta cheese, Greek yogurt, and oregano. Whip with a fork until light and fluffy.
- Toss grapes with remaining olive oil and place on a separate baking sheet. Roast for 15-20 minutes, or until softened and slightly caramelized.
